Healthy Soup With Chicken And Vegetables


INGREDIENTS:
  • 1 tablespoon olive or vegetable oil
  • 1/2 cups chopped onion
  • 2 cloves garlic, finely chopped 
  • 8 medium green onions, sliced
  • 2 medium carrots,cabbage small dice sliced
  • 3 cups cubed cooked chicken
  • 1 pound dried pasta
  • 1 tablespoon chopped fresh parsley
  • 2 tablespoons chopped fresh basil
  • 1/2 teaspoon pepper
  • 1 dried bay leaf
  • 3 quarts chicken stock
  • 1 cup chopped celery
  • Salt as required

HOW TO MAKE:
In a large sauce pan, heat the olive or vegetables oil.When the oil is hot, add the chicken saute for about 5 minutes, or until the meats are brown.Add the onions and saute till the onions are translucent. Add celery, carrots,cabbage, green onions, garlic, parsley, basil, and bay leaves. Season with Creole seasoning. Saute the vegetables for 4 minutes. Add the pepper and saute for 1 minute. Add the stock and bring the liquid to a boil. Add the pasta. Reduce the heat to a simmer, uncovered, for about 20 minutes, or until the pasta is tender. Cover the pan and simmer the soup for 10 to 11 minutes on a low to medium flame. Then add salt as required.
Serve The Soup hot.
