INGREDIENTS:
- 2 cups suji
- 2 cups milk
- 1/2 cup ghee
- Water as required
- 1.5 cups sugar or as required
- 2 tbsp powder milk
- ½ cup pistachios chopped
- 1 tsp cardamom powder
- 1/4 tsp red food color
- 1/4 tsp vanilla for flavor
HOW TO COOK:
- Heat a pan and roast the suji for 10-11 mins on a low flame. keep on stirring in between so that the suji does not burn and gets a uniform color. keep aside.
- In another pan take water and sugar and give it one rolling boil. close the fire. strain the water to remove the sugar impurities and keep aside.
- In a pan, melt ghee. fry pistachios nuts in the ghee till golden brown.
- Add the roasted suji and mix it with the ghee.
- Mix everything well and after 2-3 minutes add cardamom powder.
- Roast the suji, ghee, cardamom, pistachios nuts mixture for 12-15 minutes on a low flame.
- Add the hot sugar water to the suji slowly and gradually.
- Add powder milk.
- Keep on stirring while adding the sugar solution. take care to see that no lumps are formed.
- Warm 2 tbsp water and add color to it then add it to halwa.
- Stir the whole mixture very well and let the suji halwa cook for 5-6 minutes more.
- Add vanilla flavor.
- Halwa is ready, now transfer it to the greased plate and level it with laddle.
- Allow halwa to cool at least for half an hour before you cut them into desire shape and Serve it.
